I cannot replicate the issue here, but without the document protected, press Alt+F9 to toggle on the display of the field codes and inside the closing } insert \* CHARFORMAT and the select the field and make it bold. Use Alt+F9 to toggle off the field codes and try protecting the form and using it again.
