T asty and super easy, this baked omelet is quite good. Once baked, it's thick, fluffy, and full of flavor. There's plenty of bacon and gooey cheese to make this super satisfying.
Preheat oven to 350°F (180°C ... Sprinkle with mushrooms, red pepper and cheese. Bake for about 30 min or until puffed, golden and knife inserted in centre comes out clean.
Season with salt and pepper. Using a spatula, fold one third of the omelette into the middle, then turn the omelette onto a warm plate folding over itself. Serve immediately.
Portion the omelette and serve with a pile of the fragrant salad, and big dollops of yoghurt. Also consider: Serving with flaky, stretchy paratha or roti. Heat the oven to 220°C/200°C fan/425°F.
